Using 100% Irish malted barley, Waterford’s Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish “teireoir” – one farm, one place at a time. No colouring, chill-filtration or additives are used whilst long fermentation and slow distillations have created an impactful flavour.
Known locally as ‘the place of the lush grass’ Sheestown is a rolling, lowland terroir of well-drained loamy soil where Phillip O’Brien has farmed the land for half a century. For maturation, 35% of the casks were first-fill American oak, 21% virgin American oak, 25% premium French oak and 19% were previously used to age vin doux naturel (fortified wines).
An amber hue appearance with lingering oils. Earthy notes on the nose with clove, poached pears and honeycomb. Gentle spice mix greets the palate with lasting cloves that dries with citrus peel marmalade and fresh honey. A long spicy finish that leaves a warm tingle on the front of the tongue.
