Using 100% Irish malted barley, Waterford’s Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish “teireoir” – one farm, one place at a time. No colouring, chill-filtration or additives are used whilst long fermentation and slow distillations have created an impactful flavour.

The second release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region to grow malting barley. For maturation 55% of the casks were first-fill American oak, 22% were premium French oak and 22.5% were previously used to age vin doux naturel (fortified wines). The second edition is almost four months older than the first with some of the first-edition spirit included.

Tasting Note
A yellow gold appearance with heavy oils. Red grapes on the nose with tilled earth and dried fruit. An initial oily mouthfeel with white pepper, apricots, spices and toffee. A dry oily finish with spice, chocolate, malt that lasts.
